Pork and chorizo layered with marinated chicken breast and roasted red peppers.
Ploughmans, seasoned pork layered with smoked ham and red Leicester cheese topped with a pickle.

These were nicer.
Ullswater pie, ham and chicken with apple and apricot stuffing and a sausage, bacon and egg pie.
The gala pies weren’t as good as a proper gala pie.
A pork pie with a boiled egg in the middle.

Bringing me back down to earth about British cuisine again.

Just realistic. A lot of your pictures are very appetizing and make me think British food is getting more sane.
I still contend that Scottish food is better and more European than English food.

However, I feel bad for picking on British food. US food is just as bad, if not worse (it’s all somewhere between insipid and sickly-sweet, while British ranges from organ meat savory through sweet ) , and the only redemption is that it is huge so there’s a little more regional variation. England alone is about the size of South Carolina and the entire UK is about the size of Oregon.

I’m very intrigued by this! Very different from any cuisine I see here in the states, I dig this!

It’s just the same principle as a pork pie, but instead of filling the pie case with one meat, your layering the meat with other stuff.
I prefer the regular gala pie which is a pork pie, half filled, then you put a little divet in the middle, put a boiled egg in, filler over and around it with more pork meat, top it with pastry and cook.
